Roasted Indian Cauliflower

1 large head cauliflower

4 tablespoons vegetable oil

½ teaspoon ground turmeric

1 small onion, minced

2 tomatoes, pureed

1 teaspoon garlic powder

3 teaspoons garam masala (Optional)

½ head lettuce
Cooking Instructions

Preheat your oven to 350°F (175°C). Trim most of the cauliflower's stem and place the whole head into a baking dish.

In a small pan, heat two tablespoons of oil along with turmeric. Once hot, brush the cauliflower head generously with the oil-turmeric mixture.

Roast the cauliflower in the oven for about 30 minutes.

While the cauliflower bakes, heat two tablespoons of oil in a skillet. Add the minced onions and sauté until they turn a medium brown. Stir in the pureed tomatoes, garlic powder, garam masala, and salt. Let this simmer for about 10 minutes.

Place lettuce leaves on a serving platter, and arrange the roasted cauliflower on top. Pour the tomato curry sauce over the cauliflower and serve hot.
