Rochester-Style Chicken French

2 large eggs, beaten

1 tablespoon white sugar

1 tablespoon grated Parmesan cheese

2 tablespoons olive oil

4 skinless, boneless chicken breast halves

¼ cup butter

2 teaspoons minced garlic

¼ cup dry sherry

¼ cup lemon juice

2 teaspoons low-sodium chicken base
Cooking Instructions

In a shallow dish, combine flour, salt, and pepper. In a separate bowl, whisk together beaten eggs, sugar, and Parmesan cheese until smooth and the sugar has dissolved.

Heat olive oil in a large skillet over medium heat until it shimmers. Coat the chicken breasts first in the flour mixture, then dip them into the egg mixture. Carefully add the coated chicken breasts to the skillet and cook until golden brown and cooked through, about 6 minutes per side. Remove the chicken and set aside.

In the same skillet, lower the heat and melt butter. Add garlic and cook briefly, then pour in sherry, lemon juice, and chicken base. Stir to combine and let the sauce simmer, stirring occasionally, for about 5 minutes until it thickens slightly and becomes smooth. Be sure to scrape up any browned bits from the skillet as you stir.

Return the chicken breasts to the skillet, spooning some sauce over them. Let the chicken simmer in the sauce for about 15 minutes. To serve, place a chicken breast on a plate and drizzle with the sauce.
