Rosemary Lemon Salmon Fillets

1 lemon, thinly sliced

4 sprigs fresh rosemary

2 salmon fillets, bones and skin removed

coarse salt to taste

1 tablespoon olive oil, or as needed
Instructions

Preheat your oven to 400°F (200°C).

Place half of the lemon slices in a single layer in a baking dish. Add two sprigs of rosemary, and then place the salmon fillets on top. Sprinkle with salt, layer the remaining rosemary sprigs, and top with the rest of the lemon slices. Drizzle with olive oil.

Bake for 20 minutes or until the salmon easily flakes with a fork.
