Rosemary Roast Chicken

1 small onion, quartered

¼ cup chopped fresh rosemary
Instructions
Begin by preheating your oven to 350°F (175°C).
Rub the chicken generously with salt and pepper, making sure to season the cavity as well. Stuff the inside with onion and fresh rosemary. Place the chicken in a 9x13-inch baking dish or roasting pan.
Roast the chicken in the preheated oven for 2 to 2 1/2 hours, or until the meat is no longer pink and the juices run clear. A meat thermometer inserted into the thickest part of the chicken should read at least 165°F (74°C).
