Rosy Applesauce
Ingredients List
-
5 pounds unpeeled Macintosh apples, quartered and cored
-
¾ cup white sugar
-
¾ cup water
-
¼ cup fresh lemon juice
-
1 teaspoon ground cinnamon
-
½ teaspoon ground nutmeg
Instructions
-
Combine apples in a large pot with sugar, water, and lemon juice. Bring the mixture to a boil, then lower the heat to medium-low and let it simmer, uncovered, stirring occasionally, until the apples are tender and begin to break down, about 25 minutes.
-
Once the apples are cooked, remove from heat and let cool slightly. Use a food processor or food mill to puree the apples. If using a food processor, strain the puree through a fine sieve to remove any remaining apple skins.
-
Stir in cinnamon and nutmeg. You can serve it warm, at room temperature, or chill it in the refrigerator for a cold treat.
