Sautéed Mushrooms and Spinach with an Italian Flair
Ingredients Needed

4 tablespoons olive oil

1 small onion, chopped

2 cloves garlic, chopped

14 ounces fresh mushrooms, sliced

10 ounces clean fresh spinach, roughly chopped

2 tablespoons balsamic vinegar

½ cup white wine
-
salt and freshly ground black pepper to taste

chopped fresh parsley, for garnish
Instructions

Heat olive oil in a large skillet over medium-high heat. Sauté the onion and garlic until soft. Add mushrooms and cook for 3-4 minutes until they start to shrink. Add spinach and sauté, stirring constantly, until the spinach wilts.

Pour in balsamic vinegar, stirring until absorbed, then add white wine. Lower the heat and simmer until the wine is nearly absorbed.

Season with salt and pepper to taste, and garnish with fresh parsley. Serve while hot.
