Savory and cheesy Eggplant Parmesan Casserole
Ingredients List

2 tablespoons olive oil for brushing, or as needed

2 eggplant, cut into 1/2-inch thick slices

1 tablespoon olive oil

1 onion, chopped

¼ pound mushrooms, sliced

3 cloves garlic, minced

1 (15 ounce) can tomato sauce

¾ teaspoon dried basil

¾ teaspoon dried oregano

salt and ground black pepper to taste

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese
Instructions

Preheat the oven to 425°F (220°C).

Coat the eggplant slices with 2 tablespoons of olive oil and arrange them in a single layer in a shallow baking dish.

Bake in the preheated oven until the eggplant is tender and golden, about 20 to 25 minutes. Once done, remove from the oven and lower the temperature to 350°F (175°C).

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the onions, mushrooms, and garlic until the onions become soft, around 5 to 10 minutes. Stir in the tomato sauce, basil, and oregano, bringing the mixture to a boil. Reduce the heat and let it simmer for 10 minutes until the sauce thickens. Season with salt and pepper to taste.

Layer half of the roasted eggplant slices in a 2-quart casserole dish. Top with half of the sauce, 1 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese. Repeat the layering with the remaining ingredients.

Bake the casserole in the preheated oven for about 25 minutes, or until bubbly and heated through. Let it cool for 5 minutes before serving.
