Savory Pork Chops in Creamy Mushroom Sauce

3 tablespoons butter

8 boneless pork chops

ground black pepper, to taste

¾ cup white wine

¾ cup heavy cream

1 (8 ounce) package sliced fresh mushrooms
Directions

Heat butter in a large skillet over medium heat. Season pork chops with salt and pepper, then place them in the skillet in a single layer. Cook for 2 minutes on each side until browned. Pour in the wine and continue cooking for 6 minutes. Remove the pork chops from the skillet.

Add cream to the skillet and stir in the mushrooms. Increase the heat to high and cook for 5 minutes, stirring frequently, until the sauce thickens and reduces. Return the pork chops to the skillet to heat through before serving.

Unlike milk or sour cream, heavy cream can be brought to a boil without curdling. If you need to substitute, lower the heat or use cornstarch or flour to thicken the sauce.
