Seven-Layer Tortilla Casserole
Ingredients List

2 (15 ounce) cans pinto beans, drained and rinsed

1 cup salsa, divided

2 cloves garlic, minced

2 tablespoons chopped fresh cilantro

1 (15 ounce) can black beans, rinsed and drained

½ cup chopped tomatoes

7 (8 inch) flour tortillas

2 cups shredded reduced-fat Cheddar cheese

1 cup salsa

½ cup sour cream
Cooking Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, mash the pinto beans and stir in 3/4 cup of salsa along with minced garlic.

In another bowl, combine 1/4 cup salsa, cilantro, black beans, and diced tomatoes.

Lay a tortilla in a pie dish or tart pan. Spread 3/4 cup of the pinto bean mixture over it, leaving a small border around the edges. Sprinkle with 1/4 cup cheese and top with another tortilla. Spread 2/3 cup of the black bean mixture on top and sprinkle with 1/4 cup cheese. Repeat the layering process twice. Finish with the final tortilla, spreading the remaining pinto bean mixture and cheese on top.

Cover the casserole with foil and bake in the preheated oven for about 40 minutes. Once baked, slice into wedges and serve with additional salsa and sour cream on the side.
