Shannon's Smoky Mac & Cheese

1 (16 ounce) package elbow macaroni

6 tablespoons butter

½ cup all-purpose flour

5 ½ cups milk, divided

2 ½ cups shredded smoked Gouda cheese

1 ½ cups shredded Cheddar cheese

1 ½ cups shredded Swiss cheese

1 cup grated Parmesan cheese

½ cup grated Parmesan cheese

½ cup dry bread crumbs

1 teaspoon ground cayenne pepper

Instructions

Preheat your oven to 350°F (175°C).

Bring a pot of lightly salted water to a boil. Stir in the macaroni and return to a boil. Cook for about 8 minutes, stirring occasionally, until the pasta is al dente; drain well.

In a large pot, melt the butter over medium heat. Add the flour to the butter and whisk continuously for 1 to 2 minutes to form a roux. Gradually whisk in 2 cups of milk until smooth, then add the remaining milk. Raise the heat to medium-high and cook, stirring, until the mixture thickens but does not boil. Stir in the Gouda, Cheddar, Swiss, and 1 cup of Parmesan cheese until melted, then fold in the drained macaroni. Transfer the mixture to a 9x13-inch baking dish.

In a small bowl, combine 1/2 cup of Parmesan, bread crumbs, and cayenne pepper. Sprinkle the mixture over the macaroni, then drizzle with olive oil.

Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly. Let the dish rest for 10 minutes before serving.
