Sheet Pan Dinner with Chicken, Apples, and Brussels Sprouts

2 cups Brussels sprouts, halved

1 red apple, cut into 1-inch cubes

1 (4 ounce) package pancetta

2 tablespoons olive oil, divided

1 teaspoon minced fresh rosemary

6 skinless, boneless chicken thighs

Cooking Instructions

Preheat your oven to 425°F (220°C).

In a bowl, toss Brussels sprouts, apples, and pancetta with 1 tablespoon of olive oil and rosemary. Spread the mixture evenly on a sheet pan.

Leave space on the pan for the chicken thighs. Coat the chicken with the remaining 1 tablespoon of olive oil in the same bowl and place on the sheet pan. Season with salt and pepper.

Roast in the preheated oven, stirring the Brussels sprout mixture every 15 minutes, until the chicken is fully cooked and the juices run clear, about 40 to 45 minutes. The chicken should reach an internal temperature of 165°F (74°C) when checked with a meat thermometer.
