4 andouille sausages, sliced

1 pound uncooked medium shrimp, peeled and deveined

½ teaspoon Creole seasoning

2 tablespoons chopped fresh parsley, or to taste

finely chopped green onion, or to taste
Instructions
Start by assembling all your ingredients. Preheat the oven to 425°F (220°C). Lightly grease a large sheet pan with cooking spray.

Add the potatoes to a large pot and fill with salted water. Bring it to a boil, then lower the heat to medium-low and let it simmer until the potatoes are fork-tender, about 10 to 12 minutes.

Boil the corn for an additional 5 minutes, then drain. Cut the corn into thirds.

In a small bowl, mix together 3 tablespoons of olive oil, 3 tablespoons of Creole seasoning, the juice of one lemon, garlic, Italian seasoning, 1/2 teaspoon paprika, red pepper flakes, salt, and pepper. Stir well and set the seasoning mixture aside.

In a large bowl, combine the boiled potatoes, corn, bell peppers, cherry tomatoes, onions, and sausage slices. Add the seasoning mixture and toss everything together until evenly coated.

Spread the potato and vegetable mixture in an even layer on the sheet pan. Arrange lemon wedges around the edges of the pan.

Place in the preheated oven and bake for 8 minutes.
In a bowl, mix the shrimp with 1 tablespoon of olive oil, 1/2 teaspoon paprika, and 1/2 teaspoon of Creole seasoning. Let it marinate for a few minutes.

After baking for 8 minutes, add the shrimp to the sheet pan with the potato mixture and toss everything together to combine.

Return the sheet pan to the oven and cook for 6 to 8 minutes, until the shrimp turn opaque. Remove the lemon wedges and garnish with parsley and chopped green onions.
