Shrimp Fried Rice Delight

6 cups water

3 cups uncooked white rice

2 eggs, beaten

3 tablespoons sesame oil

1 onion, diced

2 celery, diced

1 pound cooked salad shrimp

3 carrots, diced

1 red bell pepper, diced

¾ cup snow peas, trimmed and halved

1 green bell pepper, chopped

1 teaspoon soy sauce
Cooking Instructions

In a medium saucepan, bring water to a boil. Add the white rice, bring back to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice becomes tender.

In a small skillet, scramble the eggs with a little sesame oil. Remove from heat once eggs are fully scrambled.

In a large skillet, sauté onions and celery in the remaining sesame oil. Add shrimp, carrots, onions, celery, red bell pepper, snap peas, and green peppers. Stir in the cooked rice and mix thoroughly. If desired, add soy sauce and eggs, and continue stirring until everything is heated through.
