Sicilian Anchovy Pasta
Ingredients

1 pound spaghetti

4 tablespoons olive oil

1 (2 ounce) can anchovy fillets, chopped

3 cloves garlic, crushed

2/3 cup fine bread crumbs, or to taste

1 cup chopped fresh parsley

ground black pepper to taste

4 tablespoons freshly grated Parmesan cheese
Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta.

In the meantime, heat olive oil in a medium skillet over medium heat. Add the anchovies and garlic, cooking and stirring for about 2 minutes, until the anchovies start to sizzle and the garlic becomes fragrant.

Mix in the breadcrumbs and turn off the heat. Stir in the parsley and a pinch of pepper.

Toss the cooked pasta with the anchovy sauce and finish with a generous sprinkle of Parmesan cheese. Serve and enjoy!
