Combine the cabbage, apples, and onions in a large mixing bowl.

In a saucepan over medium heat, whisk together vinegar, sugar, olive oil, vegetable oil, Dijon mustard, and red pepper flakes. Bring the mixture to a simmer. Pour the warm dressing over the cabbage mixture and toss well to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the slaw to chill.
