⅓ cup curry powder, or to taste

6 skinless, boneless chicken breast halves - cut into strips
Instructions
Prepare all the ingredients.

Heat oil in a large pan over medium heat. Add onions and cook, stirring occasionally, until golden brown and tender, about 5 to 8 minutes.

Gradually mix in the curry powder until fully incorporated.

Add the chicken, lower the heat, cover, and cook until the chicken is no longer pink and the juices run clear, about 20 to 40 minutes. Use an instant-read thermometer to check that the internal temperature has reached at least 165°F (74°C).

Remove the lid and continue cooking, stirring frequently to avoid burning, until the sauce thickens and reduces to your liking, about 3 to 5 minutes.
