Simple Lentil and Feta Wraps
Ingredients Required

6 (8 inch) whole wheat tortillas

3 tablespoons olive oil

2 cloves garlic, minced

2 shallots, finely chopped

½ pound fresh mushrooms, sliced

¼ cup dry white wine

1 (15 ounce) can brown lentils

1 (4 ounce) package feta cheese, crumbled

¼ cup chopped kalamata olives

½ cup chopped tomatoes
Instructions for Preparation

Preheat your oven to 250°F (120°C). Wrap the tortillas in foil and place them in the oven for about 10 minutes until they become soft and warm.

Heat the olive oil in a pan over medium heat. Sauté the garlic, shallots, and mushrooms for 5 minutes, until they’re lightly golden. Pour in the white wine and scrape up any flavorful bits from the pan’s bottom. Stir in the lentils and cook for another 2 minutes, just to heat everything through.

Place a portion of the lentil mixture on each tortilla. Fold or roll the tortilla, then top with crumbled feta, olives, and chopped tomatoes.
