Simple Quiche Lorraine

Ingredients List

1 unbaked 9 inch pie crust

6 slices bacon

1 onion, chopped

1 ½ cups milk

3 large eggs, beaten

¼ teaspoon salt

1 ½ cups shredded Swiss cheese

1 tablespoon all-purpose flour
Cooking Instructions

Preheat your oven to 450°F (230°C).

Line the pie crust with a double layer of aluminum foil. Bake for 8 minutes, then remove the foil and bake for an additional 4-5 minutes until the crust is set. Lower the oven temperature to 325°F (165°C).

In a large skillet, cook the bacon over medium-high heat until crispy, about 10 minutes. Drain on paper towels, crumble, and set aside. Reserve 2 tablespoons of bacon drippings in the skillet.

In the same skillet, sauté the onions in the reserved bacon grease until soft and golden. Remove and set aside.

In a large bowl, whisk together the milk, eggs, and salt. Add the crumbled bacon and sautéed onions. In a separate bowl, toss the Swiss cheese with the flour, then stir it into the egg mixture. Pour the mixture into the par-baked crust.

Bake the quiche for 35-40 minutes, or until a knife inserted into the center comes out clean. If the crust edges brown too much, cover them with foil. Let the quiche cool for 10 minutes before serving.
