Heat 1 1/2 tablespoons of olive oil and garlic-infused olive oil in a skillet over medium heat until aromatic, about 1 minute. Add the onions and mushrooms, lower the heat, and cook until softened and caramelized, with edges browned, for 8 to 12 minutes, adding more oil if necessary to prevent sticking.
