Simple Slow Cooker Pepper Steak

2 tablespoons olive oil

3 pounds beef sirloin, sliced into strips

1 tablespoon minced garlic

1 onion, chopped

½ cup soy sauce

1 teaspoon salt

½ teaspoon ground black pepper

2 teaspoons white sugar

3 green bell peppers, cut into strips

1 tablespoon cornstarch

¼ cup cold water
Cooking Instructions

Heat oil in a large skillet over medium heat. Add the steak strips and brown them on both sides, then toss in the garlic while cooking. Transfer the steak along with its juices to the slow cooker. Add onion, soy sauce, salt, pepper, and sugar. Cover and cook on Low for 6 to 8 hours until the beef is tender enough to shred with a fork.

About one hour before the cooking time is up, add the sliced green peppers. In a small bowl, mix cornstarch and cold water, then pour it into the slow cooker during the final minutes. Stir and cook until the sauce thickens to your liking.
