Slow Cooker Beef Barley Stew

3 tablespoons vegetable oil

1 ½ pounds boneless lean beef, cubed

2 teaspoons garlic powder

1 teaspoon salt

1 teaspoon ground black pepper

6 cups water, divided

3 (10.5 ounce) cans beef broth

6 medium carrots, chopped
-
6 medium green onions, chopped

4 stalks celery, chopped

1 cup barley
-
½ cup chopped fresh parsley

1 teaspoon dried thyme
Cooking Instructions

Heat oil in a pan over medium heat. Brown the beef for about 5 minutes. Season with garlic powder, salt, and pepper, then transfer to the slow cooker.

Pour a few tablespoons of water into the pan. Stir to loosen any browned bits from the bottom, then add the liquid to the slow cooker.

Add the remaining water, broth, carrots, celery, green onions, barley, and parsley to the slow cooker. Cover and cook on Low for 6 to 8 hours until the vegetables and barley are tender.

Stir in thyme just before serving to enhance the flavor.

I often prepare this soup using leftover boneless beef short ribs for added flavor.
