Slow Cooker Filipino Adobo Chicken with Bok Choy

1 bay leaf

8 skinless, bone-in chicken thighs

2 teaspoons paprika

1 large head bok choy, cut into 1-inch strips

2 green onions, sliced thinly
Instructions
In the slow cooker, mix together onions, garlic, apple cider vinegar, soy sauce, brown sugar, and a bay leaf. Season with freshly ground black pepper. Arrange the chicken thighs on top of the mixture and dust with paprika.
Cover and let it cook on Low for 8 hours.
Switch the slow cooker to High. Add bok choy to the chicken mixture and cook for an additional 5 minutes. Top with chopped green onions as a garnish.
