Slow Cooker Pernil Pork Roast

1 (3 pound) boneless pork loin roast

1 lime, cut into wedges
Cooking Instructions
In a blender, pulse together garlic, onion, oregano, cumin, chile pepper, salt, and pepper. Gradually add vinegar and olive oil, blending until the mixture forms a paste. Scrape down the sides of the blender as needed. Coat the pork loin with this mixture, then place it in the slow cooker.
Cook on Low for 6 to 8 hours, or until the pork is tender and easily shredded with a fork. Once done, cut the pork into chunks or shred it, then garnish with lime wedges before serving.
