Smoked Gouda and Bacon Stuffed Pork Chops

Ingredients List
-
2 ounces smoked Gouda cheese, shredded
-
4 slices bacon, cooked and crumbled
-
¼ cup chopped fresh parsley
-
⅛ teaspoon ground black pepper
-
2 (2 1/4 inch thick) center-cut, bone-in pork chops
-
1 teaspoon olive oil
-
¼ teaspoon salt
-
⅛ teaspoon ground black pepper
Step-by-Step Instructions
Begin by preheating your grill to a medium heat.
In a small bowl, mix together the cheese, crispy bacon, fresh parsley, and a dash of black pepper.
Place the pork chop flat on a cutting board. Using a sharp knife, carefully cut a pocket into the pork, making sure to reach the bone while keeping the sides intact. Stuff the cheese mixture into the pocket and secure it with a toothpick. Brush the pork with oil and season with salt and additional black pepper.
Lightly grease the grill grate. Grill the pork chops over medium heat for 5 to 8 minutes per side, or until fully cooked. Be mindful not to overcook!
