Southern Spicy Fried Chicken
Ingredients

1 (3 pound) whole chicken, cut into 10 pieces

1 quart buttermilk

2 tablespoons hot pepper sauce

1 teaspoon cayenne pepper

3 cups all-purpose flour

1 tablespoon cayenne pepper

2 teaspoons garlic powder

1 teaspoon paprika

salt and ground black pepper to taste

vegetable oil for deep frying
Instructions

Season the chicken pieces with salt and pepper, then arrange them in a deep baking dish.

In a large bowl, whisk together buttermilk, hot sauce, and 1 teaspoon of cayenne pepper. Pour this mixture over the chicken, tossing to coat thoroughly. Cover the dish and refrigerate for about 2 hours to marinate.

Remove the chicken from the buttermilk mixture, letting any excess drip off. Discard the leftover marinade.

In a resealable plastic bag, combine flour, 1 tablespoon cayenne pepper, garlic powder, paprika, salt, and pepper. Add 2 or 3 chicken pieces at a time to the bag, shaking well to coat the chicken with the seasoned flour.

Heat oil in a deep fryer or large pan to 350°F (175°C).

Carefully add the chicken to the hot oil, frying until golden and fully cooked. Breasts and wings will take 8-10 minutes, while thighs and drumsticks will need 13-15 minutes. The internal temperature should reach at least 165°F (74°C). Drain the fried chicken on paper towels.
