Spaghetti Diablo with Shrimp and a Kick

1 yellow bell pepper, chopped

2 (14.5 ounce) cans no-salt-added diced tomatoes

½ cup white wine

½ cup chopped fresh parsley, divided

½ teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon red pepper flakes

8 ounces whole-wheat spaghetti

12 ounces cooked shrimp

½ cup grated Pecorino-Romano cheese, or to taste (Optional)
Cooking Instructions

Heat oil in a Dutch oven over medium-high heat. Add green and yellow bell peppers, onion, and garlic, stirring until softened (about 5-7 minutes). Season with salt and pepper.

Add tomatoes, wine, 1/4 cup parsley, basil, oregano, and red pepper flakes to the bell pepper mixture. Bring to a boil, then lower the heat and cover. Simmer for about 2 hours, stirring occasionally, until tomatoes are broken down.

Boil a large pot of salted water and cook the spaghetti until just underdone, about 10 minutes. Drain the pasta.

Mix the drained spaghetti and cooked shrimp into the simmering tomato sauce. Cook for 2-3 more minutes until the pasta is fully tender but still firm. Garnish with the remaining parsley and a generous amount of Pecorino Romano cheese.
