Speedy Gnocchi

1 cup dry potato flakes

1 cup boiling water

1 egg, beaten

1 teaspoon salt

⅛ teaspoon ground black pepper

1 ½ cups all-purpose flour
Instructions

Combine potato flakes in a medium-sized bowl with boiling water. Stir until smooth and let it cool down.

Mix in egg, salt, and pepper. Gradually add enough flour to form a thick dough. Transfer the dough to a floured surface and knead lightly.

Cut the dough into two equal parts. Roll each half into a long, thin log, roughly the size of a breadstick. Using a flour-dipped knife, cut the logs into small bite-sized pieces.

Drop the gnocchi into boiling water. Once they float to the surface, remove them with a slotted spoon. Continue until all gnocchi are cooked.
