Spice-Rubbed Roasted Lamb Breast

4 pounds lamb breast, separated in two pieces

⅓ cup white wine vinegar, more as needed

1 lemon, juiced

2 cloves garlic, crushed

1 teaspoon honey

½ teaspoon red pepper flakes

Instructions
Begin by preheating your oven to 300°F (150°C).
In a large bowl, whisk together olive oil, cumin, salt, black pepper, Italian seasoning, cinnamon, coriander, and paprika until everything is well blended.
Rub the spice mixture generously over the lamb breasts, then arrange them fat-side up in a roasting pan. Cover the pan tightly with aluminum foil.
Roast in the preheated oven until the meat is tender and easily pierced with a fork, which should take about 2 hours.
While the lamb cooks, combine chopped parsley, vinegar, fresh lemon juice, garlic, honey, red pepper flakes, and salt in a bowl. Stir well and set aside.
Once done, remove the lamb from the oven.
Raise the oven temperature to 450°F (230°C) and line a baking sheet with aluminum foil.
Remove the lamb from the roasting pan and cut it into 4 pieces. Arrange the lamb pieces on the prepared baking sheet and brush the tops with the fat drippings from the pan.
Roast the lamb in the hot oven until the meat is golden brown and the edges are crispy, about 20 minutes.
Switch the oven broiler to high and brown the lamb until the top is a rich golden color, about 4 minutes. Serve the lamb with a drizzle of the parsley-vinegar sauce.
