1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 jalapeno pepper, seeded and minced

1 teaspoon dried oregano

½ red bell pepper, diced

1 ear corn, kernels cut from cob

1 (15 ounce) can black beans, drained and rinsed

½ cup plain bread crumbs

4 teaspoons chili powder

1 tablespoon minced fresh cilantro

½ teaspoon ground cumin

½ teaspoon salt

½ cup all-purpose flour, or as needed

1 tablespoon olive oil, or as needed
Instructions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add onion, garlic, jalapeno, and oregano, and cook, stirring occasionally, until the onions become soft and translucent, about 8 to 10 minutes. Next, stir in red bell pepper and corn, cooking for an additional 2 to 4 minutes until the bell pepper softens.

In a large bowl, mash the black beans. Add the cooked vegetable mixture, breadcrumbs, chili powder, cilantro, cumin, and salt. Mix well, then divide the mixture into 4 equal portions. Shape each portion into a patty and coat both sides with flour.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for 5 to 8 minutes on each side until golden brown and crispy.
Chef’s Tip
If you prefer a milder flavor, you can cut back the chili powder to 2 teaspoons to make the burgers less spicy.
