Spicy Chicken Vindaloo

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon grated fresh ginger root

1 tablespoon tomato paste

1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch pieces

2 large potatoes, cut into 1/2-inch cubes

2 (14.5 ounce) cans diced tomatoes, drained

1 ½ cups chicken broth

2 tablespoons wine vinegar

1 bay leaf

salt and black pepper to taste
Cooking Instructions

In a large pot or Dutch oven, toast turmeric, cardamom, cinnamon, coriander, cloves, cumin, paprika, and cayenne pepper over medium-low heat for about 2 minutes, stirring constantly to prevent burning and release their aromas.

Add onion, olive oil, garlic, and ginger to the pot. Increase the heat to medium and cook, stirring frequently, until the onion softens, about 5 minutes.

Stir in tomato paste until fully incorporated. Add chicken, potatoes, tomatoes, broth, vinegar, and bay leaf. Bring to a boil, then reduce the heat to medium-low. Cover and simmer for 15 minutes, or until the chicken is cooked through and the potatoes are tender.

Uncover and continue cooking for an additional 5 minutes, allowing the sauce to thicken slightly. Season with salt, pepper, and extra cayenne for added heat, if desired.
