Spicy Garlic Chicken with Orzo Pasta

1 cup uncooked orzo pasta

2 skinless, boneless chicken breast halves - cut into bite-size pieces

2 cups fresh spinach leaves

grated Parmesan cheese for topping
Instructions
Bring a large pot of salted water to a boil. Add the orzo pasta and cook for 8 to 10 minutes, or until al dente. Drain and set aside.
Heat oil in a skillet over medium-high heat. Add garlic and red pepper, cooking for 1 minute, until the garlic turns golden. Stir in the chicken, season with salt, and cook for 2 to 5 minutes, until the chicken is lightly browned and its juices run clear. Lower the heat to medium, then stir in parsley and cooked orzo. Add the spinach to the skillet and cook for another 5 minutes, stirring occasionally, until the spinach wilts. Serve topped with freshly grated Parmesan cheese.
