Spinach Lasagna Delight

1 tablespoon extra virgin olive oil

2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry

½ medium onion, chopped

2 cloves garlic, crushed

½ teaspoon dried oregano

½ teaspoon dried basil

1 (32 ounce) jar spaghetti sauce

1 ½ cups water

2 cups non-fat cottage cheese

1 (8 ounce) package part skim mozzarella cheese, shredded

½ cup chopped fresh parsley

¼ cup grated Parmesan cheese

1 large egg
-
1 teaspoon salt

⅛ teaspoon black pepper

12 uncooked lasagna noodles
Instructions

Preheat your oven to 350°F (175°C).

Heat oil in a large pot over medium heat. Add spinach, onion, garlic, oregano, and basil; sauté for about 3 to 5 minutes until the onion softens. Stir in spaghetti sauce and water; simmer for 20 minutes.

While the sauce simmers, mix together cottage cheese, mozzarella, parsley, Parmesan, egg, salt, and pepper in a bowl until well blended.

Once the sauce is ready, spoon a small amount into the bottom of a 9x13-inch baking dish. Arrange four uncooked lasagna noodles on top, then spread a third of the remaining sauce over them. Add another layer of noodles, followed by half of the remaining sauce and half of the cheese mixture. Repeat this layering process with the last noodles, sauce, and cheese mixture. Cover with aluminum foil.

Bake in the preheated oven for 55 minutes. After that, remove the foil and bake for an additional 15 minutes. Let the lasagna rest for 10 minutes before serving.
Cooking Tip
Feel free to swap the spinach with ground turkey or any other vegetable of your choice.
