Steak with Roquefort Sauce

1 tablespoon olive oil

4 (5 ounce) beef sirloin steaks

salt and coarsely ground black pepper to taste

2 tablespoons brandy

1 cup heavy cream

3 ounces Roquefort cheese, crumbled

Italian flat leaf parsley, for garnish
Instructions

Heat butter and oil in a skillet over high heat. Season the steaks with salt and pepper, then sear each side quickly. Lower the heat to medium and cook the steaks for about 5 minutes on each side, or until they reach your preferred level of doneness. Remove the steaks from the skillet and set aside to keep warm.

Pour brandy into the skillet to deglaze, scraping up any browned bits from the bottom. Add the cream and bring to a boil. Cook, stirring occasionally, until the sauce thickens enough to coat the back of a spoon. Stir in the Roquefort cheese and allow it to melt into the sauce. Pour the sauce over the steaks and garnish with fresh parsley before serving.
