Sun-Dried Tomato and Zucchini Risotto

7 cups vegetable or chicken stock

1 tablespoon butter

1 medium onion, chopped

2 cups Arborio rice, uncooked

½ medium zucchini, thinly sliced with a vegetable peeler

10 sun-dried tomatoes, softened and chopped

1 teaspoon dried thyme, crushed

6 tablespoons freshly grated Parmesan (or mozzarella) cheese

1 tablespoon chopped fresh basil leaves, or to taste (Optional)

freshly ground black pepper to taste
Cooking Instructions
In a medium-sized pot, bring vegetable or chicken broth to a boil, then reduce the heat to a gentle simmer.
In a large, heavy-bottomed pot, melt butter over medium heat. Add the onions and cook for about 2 minutes, until they soften. Stir in the rice and cook for another 2 minutes, stirring constantly, until it’s lightly toasted. Gradually add the simmering vegetable broth, stirring frequently. The risotto will become creamy and slightly sticky, with a firm al dente center.
As the risotto nears completion, stir in the zucchini, sun-dried tomatoes, and thyme, adding more stock as necessary and continuing to stir. Just before serving, stir in basil and 3 tablespoons of cheese. Spoon the risotto into 6 bowls, top with the remaining cheese, and season with freshly ground pepper to taste.
