Sweet and Savory Pineapple Pork Chops

1 tablespoon olive oil

4 boneless pork chops

1 (14.5 ounce) can chicken broth

2 tablespoons soy sauce

1 tablespoon vinegar

½ cup pineapple juice

2 tablespoons brown sugar

2 tablespoons cornstarch

1 (15 ounce) can pineapple chunks, drained (Optional)
Instructions

Heat oil in a skillet over medium heat. Sear the pork chops for 5 minutes on each side, then transfer them to a plate.

In the same skillet, add broth, soy sauce, and vinegar, bringing the mixture to a boil. Return the pork chops to the skillet, lower the heat, and simmer until fully cooked, about 20 minutes. Use an instant-read thermometer to check that the internal temperature reaches 145°F (63°C). Once done, remove the chops, keeping them warm, while leaving the cooking liquid in the skillet.

In a separate bowl, whisk together pineapple juice, brown sugar, and cornstarch until smooth.

Pour the pineapple mixture into the skillet with the remaining cooking liquid. Stir over medium-low heat, occasionally mixing until the sauce thickens and comes to a boil. Add pineapple chunks and cook for another 1 to 2 minutes, just until heated through. Serve the sauce over the pork chops.
