Sweet and Spicy Brown Sugar-Pineapple Pork Chops

Ingredients

2 teaspoons chipotle chile powder

1 teaspoon garlic powder

½ teaspoon ground cinnamon

½ teaspoon onion powder

1 (8 ounce) can pineapple rings, drained and juice reserved

1 tablespoon olive oil, divided

1 red onion, thinly sliced

¼ cup brown sugar
-
4 boneless pork chops
-
salt and ground black pepper to taste

¼ cup crumbled goat cheese
Instructions

In a small bowl, combine chipotle powder, garlic powder, cinnamon, and onion powder.

Pat the pineapple rings dry with a paper towel.

Heat 1 teaspoon of olive oil in a large nonstick skillet over medium-high heat. Add the pineapple rings and red onions, then sprinkle with 3 tablespoons of reserved pineapple juice and brown sugar. Cook for about 3 minutes per side, until the pineapple is golden brown. Transfer the pineapple-onion mixture to a plate.

Pat the pork chops dry and season both sides with salt and pepper.

Heat the remaining 2 teaspoons of olive oil in the same skillet over medium-high heat. Add the pork chops and cook until the bottom is browned, about 3 minutes. Flip the chops and sprinkle the chipotle seasoning mix on top. Cook for another 3 minutes until browned. Continue flipping and cooking until the pork is no longer pink inside, about 3 to 5 more minutes. An instant-read thermometer should read 145°F (63°C) in the center.

Transfer the pork chops to a plate and top with the pineapple-onion mixture. Finish with crumbled goat cheese on top.
