Sweet Potato and Chicken Casserole

1 tablespoon olive oil

1 large onion, finely chopped

1 clove garlic, chopped

2 pounds sweet potatoes, peeled and diced

2 carrots, diced

4 skinless, boneless chicken breast halves - diced

2 tablespoons all-purpose flour

1 cup dry white wine

2 cups chicken stock

¼ cup half-and-half or light cream
Instructions

Preheat your oven to 400°F (200°C).

Heat some oil in a large skillet over medium heat. Add onions and garlic, cooking and stirring until they start to turn golden. Add in the sweet potatoes and carrots, and cook for a few minutes until lightly browned.

Push the vegetables to the side of the skillet, creating space in the center. Add the chicken, and cook, stirring occasionally, until it’s browned on all sides. Sprinkle flour over the chicken and vegetables, stirring to mix. Gradually pour in the chicken stock, scraping up any browned bits from the pan. Stir in the wine. Transfer everything to a casserole dish and cover with a lid.

Bake for 1 hour in the preheated oven. Once done, remove from the oven and let it cool slightly before adding the cream (to prevent curdling).
