Sweet Potatoes Roasted with Honey

2 large sweet potatoes, peeled and cubed

½ cup honey

¼ cup olive oil

2 tablespoons ground cinnamon

1 tablespoon honey, or to taste
Instructions

Preheat your oven to 375°F (190°C).

In a bowl, combine sweet potatoes, 1/2 cup honey, and olive oil. Toss until the potatoes are evenly coated. Spread them out on a baking sheet and drizzle the remaining oil mixture over the top.

Roast in the preheated oven for 25-30 minutes, or until tender. Allow the potatoes to cool on the baking sheet for 5-10 minutes before sprinkling with cinnamon. Transfer to plates and drizzle with any remaining honey.
