2 pounds beef cube steak

¼ cup all-purpose flour

1 teaspoon salt

¼ teaspoon pepper

2 tablespoons olive oil

1 (14.5 ounce) can canned diced tomatoes

1 (15 ounce) can canned tomato sauce

1 large onion, thinly sliced

1 teaspoon Italian seasoning

5 small zucchini, cut into 1/2 inch slices
Instructions

In a large resealable plastic bag, combine the cube steak, flour, salt, and pepper. Seal the bag and shake until the steak is coated evenly.

Heat olive oil in a large skillet over medium heat and brown the cube steak. Lower the heat, then add the tomatoes, tomato sauce, onion, and Italian seasoning. Cover and let simmer for at least 1 hour, stirring occasionally.

Add the zucchini to the skillet, ensuring it’s well coated with the tomato sauce. Continue simmering uncovered for an additional 10 minutes, or until the zucchini is tender.
