Ted Lasso's Shortbread Cookies Are Every Bit as Delicious as They Look on TV

Ted Lasso, the endlessly charming and optimistic British soccer coach, has about a million reasons to win our hearts. But today, it's his introduction to one of the best cookies (or biscuits) I've ever tasted that has me sold.
"Biscuits with the boss" has become a beloved ritual on the show, where Ted brings homemade cookies to his boss, Rebecca, in exchange for a bit of quality time. That signature light pink box of treats has become a staple in every episode. Since season 1 of Ted Lasso (on Apple TV+), I’ve been dying to uncover the secret behind Ted’s famous shortbread biscuits, and thanks to a copycat recipe from Salt Harvest Creatives, I finally got to try them for myself.
The magic of these cookies lies in their simplicity. Butter, sugar, and vanilla come together perfectly to create a delicate balance of flaky and tender. The recipe is refreshingly easy, requiring only five ingredients. While these cookies are drier than a typical sugar cookie, that just makes them the ideal companion for a cup of "garbage water" (or coffee, if you're more refined).

How to Make Ted Lasso's Famous Shortbread Biscuits
Recipe adapted from Salt Harvest Creatives
- 1 cup unsalted butter (2 sticks)
- 2 cups all-purpose flour
- ¾ cup white sugar
- ½ teaspoon salt
- 1 teaspoon vanilla
- Preheat your oven to 350°F. Grease a 9x13 inch baking dish and line it with parchment paper.
- Cut the butter into small pieces and set aside to reach room temperature. In a large bowl, mix together flour, sugar, and salt until well combined.
- Add in the vanilla and butter, and mix on medium-low until the dough becomes crumbly and the butter is fully incorporated.
- Press the dough gently into the prepared baking dish, smoothing the top. Use a fork to prick the surface several times. Bake for 30-35 minutes, or until golden brown.
