Tennessee-Style Meatloaf

1 teaspoon seasoned salt

½ teaspoon ground black pepper

½ teaspoon hot pepper sauce (such as Tabasco)

1 pound ground beef

½ pound ground pork
-
½ pound ground veal
Instructions

Prepare the glaze: In a bowl, combine ketchup, brown sugar, and cider vinegar, stirring until fully blended.

Prepare the meatloaf: Preheat your oven to 350°F (175°C). Lightly coat two 9x5-inch loaf pans with cooking spray or line them with foil for easy cleanup.

In a microwave-safe bowl, combine onion and bell pepper. Cover and microwave for 1 to 2 minutes until softened. Allow to cool.

In a large bowl, mix together oats, milk, eggs, garlic, mustard, Worcestershire sauce, thyme, seasoned salt, black pepper, and hot sauce. Stir in the cooked onion and bell pepper. Add the ground beef, pork, and veal. Use gloved hands to mix everything until fully incorporated.

Divide the meat mixture into two equal portions and press each into a prepared loaf pan. Brush each loaf with a quarter of the glaze and set aside the rest.

Place the pans in the preheated oven and bake for 50 minutes. Remove the pans from the oven, drain any excess fat, and brush the remaining glaze over the loaves. Return the pans to the oven and bake for an additional 10 minutes. Use a meat thermometer to check that the internal temperature has reached 160°F (70°C).

Remove from the oven and allow the meatloaf to rest for 15 minutes before slicing.
Cooking Tips
For a single large meatloaf, use a 9x13-inch pan. Bake for 60 to 70 minutes before applying the glaze, then continue as directed.
If you prefer, substitute 1 pound of ground veal and omit the pork for a different flavor profile.
