Thai Green Curry Chicken Dish

1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes

2 tablespoons green curry paste

2 green onions with tops, chopped

3 cloves garlic, peeled and chopped

1 teaspoon fresh ginger, peeled and finely chopped

2 cups coconut milk

2 tablespoons white sugar

1 tablespoon fish sauce

1 tablespoon dark soy sauce

½ cup cilantro leaves, for garnish
Cooking Instructions
In a shallow dish, add 1 tablespoon of soy sauce. In another shallow dish, place 1 tablespoon of flour. Dip chicken pieces into the soy sauce, then coat them evenly in the flour.

Heat oil in a large skillet over medium-high heat. Add the chicken and cook, stirring frequently, until browned, about 5 minutes. Remove the chicken from the skillet and set aside.

Lower the heat to medium and mix in the curry paste. Cook for 1 minute, allowing the flavors to bloom. Add green onions, garlic, and ginger; cook for another 2 minutes.

Return the chicken to the skillet, stirring to coat in the curry paste. Add coconut milk, sugar, fish sauce, and the remaining 1 tablespoon of soy sauce. Simmer over medium heat for about 20 minutes, until the chicken is tender and fully cooked. Serve with fresh cilantro leaves.
