Thai-Inspired Chicken
Ingredients List
-
1 cup soy sauce
-
8 cloves garlic, minced
-
2 tablespoons hot pepper sauce
-
1 tablespoon minced fresh ginger root
-
2 pounds skinless chicken thighs
-
1 tablespoon sesame oil
-
1 tablespoon brown sugar
-
1 onion, sliced
-
½ cup water
-
4 tablespoons crunchy peanut butter
-
2 tablespoons green onions, chopped
Cooking Instructions
-
In a large mixing bowl, combine soy sauce, minced garlic, hot pepper sauce, and ginger. Stir until well-blended. Add the chicken pieces, ensuring they are fully coated, then cover the bowl and refrigerate for at least 1 hour to marinate.
-
Once marinating is complete, remove the chicken from the marinade, discarding any excess liquid. Set the marinade aside.
-
In a Dutch oven, heat sesame oil over medium-high heat. Stir in brown sugar until it dissolves. Add chopped onion and sauté for 5 minutes. Add the chicken and cook, stirring occasionally, until evenly browned (about 5 minutes). Pour in water and the reserved marinade, then bring to a boil.
-
Lower the heat and simmer for 15-20 minutes. Add peanut butter and stir until smooth and well incorporated, then simmer for an additional 10 minutes. Transfer the chicken to a serving platter, drizzle the sauce over it, and garnish with chopped green onions.
