Preheat your outdoor grill for indirect cooking over medium-high heat.

Remove giblets from the turkey, rinse it thoroughly, and pat it dry. Tuck the wings back to secure the neck skin and re-position the legs into a tucked position.

Coat the turkey with oil and season generously on both the inside and outside with Italian seasoning, salt, and pepper. Set the turkey, breast-side up, on a metal rack inside a large roasting pan.

Place the pan over the preheated grill on indirect heat. Grill for 2 to 3 hours, or until the internal temperature of the thigh reaches 180°F (85°C).

Once cooked, remove the turkey from the grill and let it rest for 15 minutes before carving.
Recipe Tip
To make gravy using turkey drippings, place a metal pan underneath the turkey inside the roasting pan. Add 1/2 cup of water to the metal pan and top up as necessary during grilling to keep the drippings from burning. About 30 minutes before the turkey finishes cooking, remove the pan from underneath the bird.
