The Ultimate Smoked Pork Spare Ribs

Ingredients List
Pork Ribs:

6 pounds pork spareribs

3 cups apple wood chips, soaked
Mop Sauce Ingredients:

1 cup apple cider
-
¾ cup apple cider vinegar
-
1 medium jalapeño pepper, finely chopped (Optional)

3 tablespoons hot pepper sauce

2 tablespoons lemon juice
-
1 tablespoon onion powder
-
1 tablespoon garlic powder

kosher salt and ground black pepper to taste
Instructions

Prepare the ribs: In a small bowl, combine brown sugar, chili powder, garlic powder, paprika, black pepper, onion powder, salt, cumin, cinnamon, jalapeño seasoning, and cayenne pepper.

Place the spareribs in a glass baking dish and coat them generously with the seasoning mix. Cover and refrigerate for at least 4 hours, or preferably overnight.

When ready to cook, set up an outdoor charcoal grill for indirect heat or preheat your smoker to 250°F (120°C).

While the grill preheats, prepare the mop sauce: In a medium bowl, combine cider vinegar, jalapeño pepper, hot sauce, lemon juice, onion powder, garlic powder, salt, and pepper.

Once the coals are ashed over, place two handfuls of soaked wood chips directly onto the coals. Arrange the ribs on the grill grate, bone-side down. Cover and smoke for 3 1/2 to 4 hours, basting with mop sauce every hour. Add soaked wood chips and more coals as necessary to maintain a cooking temperature of at least 225°F (110°C). Discard any unused mop sauce.
