This Doritos Locos Meatloaf, inspired by Taco Bell, tastes even better than anything you'd grab at the drive-thru!

If you’re a fan of food, cooking, and a good laugh, you’ve probably already checked out the 'Mythical Kitchen' YouTube channel. It’s the culinary spinoff of the hit show 'Good Mythical Morning.' Their videos combine cooking challenges, comedy, and celebrity interviews. After years of serving up fun in the kitchen, the team is releasing their cookbook, 'Rhett & Link Present: The Mythical Cookbook,' on March 12. They gave us an early look, and of course, we had to try the Doritos Locos Meatloaf. Trust us, it’s just as delicious as it sounds.

Exciting news! This cookbook is hands down the most entertaining and fun cookbook I’ve ever reviewed. I found myself reading it cover to cover, flagging recipes I was eager to try. The instructions are so engaging, they feel like a great read—full of personal stories and funny tips. Take the Fruity Pebble Pancakes recipe (definitely marked that one to try), where the directions say: 'Once your batter has rested, work on your shoulder strength and whisk those egg whites as much as your rotator cuff can handle...' Hilarious, right? It’s full of gems like that.
We Tested One of the Recipes
The cookbook is packed with awesome recipes, from fun mash-ups to beloved family favorites, and unique spins on classics. We couldn't resist trying the Doritos Locos Meatloaf. The header encouraged us to 'live más,' so that's exactly what we did while preparing it.
Like many meatloaf recipes, this one starts by sautéing onions with seasonings, but instead of the usual Italian herbs, it calls for Taco Bell seasoning—a brilliant touch for that 'más' flavor. Once the onions are softened, they’re combined with ground beef, breadcrumbs, oregano, crumbled Nacho Cheese Doritos, eggs, and Taco Bell Fire Sauce. After gently mixing everything together, it’s transferred into a Bundt pan and baked over a water bath (created with a roasting pan and some water) for an hour. Once flipped, it’s topped with shredded Cheddar and baked again before being drizzled with sour cream and garnished with diced tomatoes.
As a fan of classic ground beef tacos, this meatloaf hit the spot. The swap of Taco Bell Fire Sauce for ketchup and the addition of Taco Bell Taco Seasoning Mix really brought out that iconic taco flavor. And the Doritos? While you don’t exactly taste them, they add a cheesy, orange-tinted vibe that makes the loaf extra special.
Don’t skip the water bath—it’s the secret to keeping the meatloaf moist. And when it comes to meatloaf, that’s definitely a win. This recipe is as delicious as it sounds, and we were lucky enough to try it ourselves. We’re sharing the full recipe here:
'Mythical Kitchen’s' Doritos Locos Meatloaf Recipe

"Feeds 2 Joshes or 6 moms."
Ingredients:
- 2 tablespoons vegetable oil
- 2 large yellow or white onions, minced
- 1 (1-ounce) packet Taco Bell Taco Seasoning Mix
- 2 teaspoons dried oregano
- 1/2 of a 7.5-ounce bottle Taco Bell Fire Sauce
- 2 1/2 pounds 80/20 ground beef
- 2 teaspoons salt
- 1 cup Italian bread crumbs
- 3/4 cup crushed Nacho Cheese Doritos (from at least a 9.25-ounce bag)
- 2 large eggs, beaten
- 1 1/2 cups shredded medium Cheddar (about 6 ounces)
- 1/4 cup sour cream, for serving
- 1/4 cup diced fresh tomatoes, for serving
Instructions:
- Preheat your oven to 325°F (165°C) and grease a 10-inch Bundt pan.
- Fill a roasting pan with water and place it on the bottom oven rack, leaving the middle rack open for the loaf.
- Heat oil in a sauté pan over medium heat until shimmering. Add onions, taco seasoning, and oregano, stirring often until the onions are translucent, about 6 minutes. Transfer to a large bowl, add 1 tablespoon of Fire Sauce, stir, and let it cool to room temperature.
- Great job! Now add the beef, salt, breadcrumbs, crumbled Doritos, and eggs to the bowl. Use your hands (the best kitchen tool) to gently but thoroughly mix everything together without pressing it down too much. Keep your loaf fluffy by avoiding compacting it.
- Transfer the mixture to the pan and use a pastry brush to coat the top with the remaining Fire Sauce.
- Bake for 60 to 75 minutes until fully cooked (internal temperature should reach 160°F).
- Remove the meatloaf from the oven (keep the oven on) and let it cool slightly. Flip it out of the pan onto a baking sheet, sprinkle with grated cheese, and return it to the oven for 4 minutes, or until the cheese is melted and bubbly. Take it out, drizzle with sour cream (preferably using a squeeze bottle or Taco Bell sour cream gun), and top with diced tomatoes. Slice it up and live más than ever.
