Tonkatsu: Japanese Crispy Pork Cutlets

Ingredients List
-
2 eggs
-
1 teaspoon milk
-
½ teaspoon minced garlic
-
salt to taste
-
½ teaspoon pepper
-
1 cup vegetable oil for frying
-
8 thin cut boneless pork chops
-
1 ½ cups panko crumbs
Cooking Instructions
-
In a medium bowl, whisk together eggs, milk, garlic, salt, and pepper. Heat oil in a large skillet over medium-high heat. Place panko breadcrumbs in a shallow dish.
-
Dip each pork chop in the egg mixture, followed by a coat of panko crumbs. Repeat the process by dipping again in the egg mixture and coating with an extra layer of panko. Set the coated chops aside on a plate. For best results, let them rest for 10 minutes to firm up the coating.
-
When the oil is hot, add the pork chops to the skillet and cook for 5 minutes on each side, or until golden and crispy.
