Traditional Chicken and Dumplings

1 (2 to 3 pound) whole chicken

2 cups all-purpose flour

1 teaspoon baking powder

1 cup hot chicken broth

1 egg
Instructions

Place the chicken in a large pot or Dutch oven and cover with salted water. Simmer until the chicken is fully cooked and tender. Remove the chicken from the pot, discard the bones, and keep the meat warm while preparing the dumplings.

For the dumplings: In a large bowl, sift together 2 cups of flour and 1 teaspoon of baking powder. Create a well in the center, then pour in 1 cup of hot chicken broth, mixing with a fork and then your hands. Add in the egg and stir until the dough is well combined.

On a floured surface, knead the dough briefly. Divide it into 4 or 5 portions and roll each as thin as possible. Slice into 1.5 to 2-inch wide pieces, then cut these into 2-inch long strips. Drop the strips into the boiling chicken broth and cook for 10 to 15 minutes. Serve with the prepared chicken.
