Tropical Hawaiian Chicken Wings

4 cups canola oil for deep frying

3 pounds chicken wings, tips removed and wings cut in half at joint

1 tablespoon garlic salt

1 cup cornstarch

2 eggs, beaten

½ cup cider vinegar

¼ cup pineapple juice

¼ cup ketchup
-
1 cup honey
-
1 tablespoon soy sauce

2 tablespoons toasted sesame seeds

2 green onions, thinly sliced
Instructions

Preheat the oven to 350°F (175°C). Heat oil in a deep fryer to 375°F (190°C). Line a baking sheet with foil and spray with non-stick cooking spray.

Season the chicken wings with garlic salt and let sit for 10 minutes. Coat wings in cornstarch by placing them in a large plastic bag, a few at a time. Shake off excess cornstarch, dip into beaten egg, and coat again in cornstarch. Fry the wings until golden brown, then drain on paper towels.

In a saucepan, combine vinegar, pineapple juice, ketchup, honey, and soy sauce over medium-high heat. Bring to a simmer. Place wings in a bowl, pour all but 1/2 cup of the sauce over the wings, and toss to coat. Reserve the remaining sauce for basting.

Arrange the wings on the prepared baking sheet. Bake for 30 minutes, baste with the remaining sauce, turn the wings, and bake for an additional 20 minutes.

To serve, arrange the wings on a platter and garnish with sesame seeds and chopped green onions.
