Truffle and Parmesan Risotto

Ingredients

1 quart chicken broth

3 tablespoons butter, divided

1 tablespoon olive oil

½ medium onion, minced

1 ¼ cups Arborio rice

½ cup white wine
-
¼ cup hot water, or as needed (Optional)

⅓ cup grated Parmesan cheese

2 tablespoons white truffle oil

1 teaspoon milk, or as needed

2 tablespoons chopped fresh parsley, or to taste

salt and ground black pepper to taste
Directions

In a stockpot, warm the chicken broth over medium-low heat for 3 to 5 minutes.

In a large, heavy-bottomed pan, heat 1 tablespoon of butter and olive oil over medium heat until the butter melts. Add the onion and sauté until translucent, about 2 minutes. Stir in the rice, ensuring it’s coated, and cook for 1 minute until fragrant.

Add the wine to the rice mixture and stir until the liquid is absorbed, about 5 minutes. Begin adding the hot broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is tender with a slight bite, about 20 to 30 minutes. If you run out of broth, finish with hot water.

Stir in the Parmesan, remaining butter, truffle oil, and milk until fully combined. Season with parsley, salt, and pepper to taste. Serve immediately.
